Meera's Grandmother's Vegetable Pickle

serves 2 liters:
Ingredients
  • 5lbs (2.2 Kg) cut vegetables (carrots, cauliflower, turnip, eggplant, squash, frozen peas, ginger, chili peppers)
  • 1 cup ground mustard seed
  • 1 cup chili powder
  • 3/4 cup – 1 cup salt
  • 1 tsp tumeric
  • asophoteta powder
  • 3/4 cup oil
  • 1 cup white vinegar
Directions
  1. Steam cut vegetables in water until it comes to a slight boil. 
  2. Strain vegetables. 
  3. Heat oil in a pan. Put vegetables and all spices (start with 3/4 cup of salt) in pan. Mix together.
  4. Add vinegar. 
  5. Taste & add more salt if necessary. 
  6. Let stand over night so oil from mustard seeds begin to seep out. 
  7. Pack in a mason jar.
